- Fermentation with indigenous yeasts, 6-8 days maceration in roto-fermenter and 10-15 days completion of fermentation in stainless steel
- Malolactic fermentation in French oak barriques
- Aged in French oak barriques (40% new and 60% used) for 24 months, followed by 12 months between steel and bottle
- 165 cases produced annually

"At 70 years old, the estate's oldest vines are found in a 1ha plot on Giachini's south-facing slope at a modest 280m. The warmth of the site is palpable in the density, substance and ripeness of this 2021 – yet freshness still reigns, and aromas of wild flowers and forest floor are extremely becoming. On the palate, layers of dark raspberry take on earthy depths with mushroom accents, and the chewy tannins are pliant and give balanced support. A very juicy finish."
