Azul is a deep dive exploration into Milpa’s Oaxacan heirloom blue corn using a natural malting process wherein the corn is malted similarly to barley in a dark, humid room for three days, allowing the natural enzymes to transform starch to sugar. The resulting whiskey is confoundingly complex—a true celebration of its prized agricultural base product and one of the most unique whiskeys available.
