REGION: Ribeira Sacra
Castro Candaz is the Ribeira-Sacra appellation project from Raúl Pérez and his close friend and collaborator Rodri Méndez. There is Mencía, to be sure, but also significant amounts of Alicante Bouschet and Trousseau. The whole-cluster fermentation occurs in foudre, followed by aging in neutral oak.
Dominio do Bibei is the domaine of reference in the lesser-known Quiroga-Bibei subzone of Galicia's Ribeira Sacra. Proprietor Javier Domínguez and team are sparing no pains in making their best wines ever from back-breakingly beautiful terraced vineyards at up to 500-600 meters above sea level.
