Founded in 1897 and still run by the fifth generation of the Shoji family, Kidoizumi is the only brewery in Japan using the Hot-Yamahai method where the sake is deliberately heated during fermentation to develop rich and luscious flavors. The result is sake unlike anything else: fantastically creamy with wild tropical fruit notes and incredibly sharp and refreshing acidity. A true iconoclast and pioneer of the sake world.

Yuki Yamazaki founded the Japanese Bitters Co. to feature classic Japanese flavors in cocktails. Now, with a full domestic brewing license and a wide range of bitters and botanical liqueurs, these expressions are ready to add focused Japanese character in a wide array of applications.
