Scientific Julep

Credit: c. 1856; revised for Skurnik Spirits

• 2.5 oz Dudognon 'Reserve' 10yr Cognac
• .5 oz El Dorado Cask Aged 8yr Rum
• .5 oz water
• 1 tbsp sugar
• 1 slice orange
• 1 slice lemon
• 4-5 mint leaves

Gently press several fresh mint leaves with sugar and water in large rocks glass; add the spirits and citrus; top with crushed ice; roll the drink back between two glasses several times; garnish with mint and a pineapple wedge (after using the pineapple to lightly rim the glass).
