Shvo Vineyards

Owned and founded by winemaker Gaby Sadan in 2007, Shvo Vineyards is an estate winery located in Jish (Gush Halav) in the Upper Galilee region in the north of Israel. His vineyards are planted in the heart of a natural oak grove at an altitude of 800 meters above sea level on top of a hill overlooking Mt. Meron. Gaby believes in sustainable viticultural practices that rely on the regenerative principle of creating an ecosystem in the vineyard, which has led him to utilize biological pest management with predatory wasps instead of spraying, plant cover crops, and minimize irrigation by head-pruning his Grenache and Mourvèdre vines.

 

Thanks to his vineyards’ unique aspect on the western edge of the Upper Galilee, it benefits both from the region’s typical sunny weather, and from the tempering effect of the western winds blowing off the Mediterranean Sea. The soil is gravelly flint (silex) clay, similar to those of the Loire Valley. The vineyards are spread out over approximately 10 hectares and mainly planted with Syrah, Grenache, Mourvèdre and Barbera for the reds, along with Sauvignon Blanc and Chenin Blanc for the whites.
