Kefalonia lies off the west coast of Greece, in the Ionian Sea, and is best known for its native grape variety Robola (no relation to Ribolla Gialla). It is here that restauranteur Panos Sarris decided to follow his dream and open a winery on his home island. He focuses on indigenous varieties, using wild fermentations to showcase the unique Ionian terroir.
