Chikuma Nishiki has been brewing sake since 1681 in the high mountain region of Nagano, in the shadow of Mt. Asama and Mt. Yatsugatake. The naturally cold temperatures and fresh clean well water sources make it an ideal location for brewing elegant sake. Utilizing locally grown Miyama Nishiki, a rice prized for its ability to grow in the cool climate of Nagano, Chikuma Nishiki typically makes sake that is well-structured, flavorful and layered in flavor, with a touch of sweetness.
