Hans hand-harvests organic estate-grown Williams pears (aka Bartlett pears) from the Reisetbauer family farm’s grove of nearly 17,000 Williams pear trees underripe, ripe, and overripe to capture the purest and most complete expression of the fruit for this eau-de-vie. After harvesting, the fruit is stored for 2 days to ripen further before being mashed and fermented between 16–17 °C (60–63 °F) in stainless steel for 8–10 days.
