Moscofilero, ‘Salto’ (Wild yeast ferment), Domaine Skouras
100% Moscofilero. “Salto” refers to a leap of faith in Greek. The Salto project began when Skouras elected to bottle only a single colon of Moscofilero, the darkest and thickest skinned Mavrofilero. Grown at 600 m in the Mantinia sub region, these 10 year old vines are tended in sandy soils. Skin contact for 3 hours. Up to 48% free-run juice due to dark skins. Controlled alcoholic fermentation in stainless steel vats with wild yeasts. Short ageing over fine lees.
