Moscofilero, ‘Salto’ (Wild yeast ferment), Domaine Skouras
100% Moscofilero. “Salto” refers to a leap of faith in Greek. The Salto project began when Skouras elected to bottle only a single colon of Moscofilero, the darkest and thickest skinned Mavrofilero. Grown at 600 m in the Mantinia sub region, these 10 year old vines are tended in sandy soils. Skin contact for 3 hours. Up to 48% free-run juice due to dark skins. Controlled alcoholic fermentation in stainless steel vats with wild yeasts. Short ageing over fine lees.
Soft color with a light shade of grey. Νose with high lift and complexity with aromas of roses, jasmine, lime, grapefruit and other citrus fruits. Of medium body with explosive acidity –full of taste and refreshing– with aromas of citrus flowers and tropical fruits. Complex and medium-length aftertaste.

The 2014 Salto Moscofilero Wild Yeast, coming in at 11.5% alcohol, is a step back from the recent dynamic duo of 2013 and 2012, but it has many virtues of its own, despite a trickier vintage. It is not as obvious in concentration or grip, but it still has good structure, an elegant feel and the sensation of acidity cutting gently through each layer of fruit as it unwinds. Skouras said to me that they worked hard in this vintage to overcome issues, hand sorting and what not. Overall, it worked out well, even if this is a bit understated. This will never be a big and obvious stunner, but it has the focus and grip to show beautifully.
