Chateauneuf du Pape Rouge, Domaine Lafond
Grape Varieties : grenache 80%, syrah 10%, mourvèdre 10%.
The soil : Two separate parcels– one stony, the other sandy and pebbly terraces.
Average age of the vines : 30 years.
The harvest : Manual
Winemaking process and aging : Grapes are wholly destemmed. Long fermenting : 21 days to obtain supple and well-present tannins. Pressing, end of fermentation and conservation in stainless steel tank until the first racking. Then, the wine is aged in new barrels (half in strong toast + half in less strong toast) from January to October for the 20% constitued by syrah and mourvedre, to soften the tannins, to oxygenate the wine and to bring a touch of vanilla which will blend with the structure of grenache always in stainless-steel. The bottling is around January. From this moment, the harmonious blending between the structure of the wine and the aging in barrels brings a good balance which is going to improve for a few years.
